Cassava at the University of Chicago Celiac Disease Fundraiser

In 2013, we were invited to attend Spring Flours, a fundraiser hosted by the University of Chicago Celiac Disease Center, one of the leading Celiac research centers worldwide. Founded by Dr. Stephano Guandalini, the center’s mission is to find a cure for Celiac disease and to increase rates of diagnosis by combating the common misconception in the American medical community that Celiac Disease is extremely rare (in actuality, current studies estimate that 1 in 100 Americans have Celiac Disease).

 

 

At Spring Flours, Cassava joined with some of the leading restaurants in Chicago to raise funds for the center’s important work. It thrilled us to be a part of the event and we hope to continue to network with other chefs and restaurants dedicated to providing safe and tasty food for those with Celiac Disease.
