Ever since our store opened in 2010, chipotle pepper has been our secret weapon for adding some kick and a lot of flavor to many of empanadas and our beef chili. We use it in almost all of our meat rubs. Over the years, we've come to realize that not all chipotle pepper is created equal. 

What is chipotle pepper?

Chipotle pepper is made from ripe Jalapeno peppers that have been smoked and dried. They are known as "chile morita" in Mexico due to their dark red, almost purple color. This is why good quality chipotle pepper should be dark red. The bright red variety you might find in the grocery store has probably been diluted with something else.

This is our favorite chipotle pepper. Just from the smell you can tell this is not the generic variety from the grocery store. It is potent, so just a little bit goes a long way. Think a 1/4 - 1/2 a tsp for one lb of meat. You can also add it to sauces and soups for a fiery, smoky flavor enhancer.
